Chicken katsu (Japanese:チキンカツ,Hepburn:chikinkatsu), also known aspanko chicken ortori katsu (鶏カツ) is aJapanese dish offried chicken made withpanko bread crumbs. It is related totonkatsu, fried pork cutlets. The dish has spread internationally and has become a common dish served at Japanese and East Asian restaurants worldwide.[1][2]

Etymology

Katsu (カツ) is a shortened form ofkatsuretsu (カツレツ), the Japanese transliteration of the English word "cutlet". The alternate nametori katsu means "bird cutlet", where "bird" refers to chicken by default in culinary contexts.

Liketonkatsu, chicken katsu is generally served withtonkatsu sauce(とんかつソース), a thick Japanese vegetarian pureed fruit-basedbrown sauce, along with rice ormiso soup as part of a two- or three-itemset meal, or as dinner with rice and vegetables.

Outside Japan

In Hawaii, chicken katsu is more popular than tonkatsu and substitutes for it in dishes such askatsukarē andkatsudon.[3] In aplate lunch, chicken katsu is generally served on a bed of shredded cabbage,[4] with a well-seasoned ketchup similar tococktail sauce.[5][6]

In theUnited Kingdom, the word "katsu" has become synonymous with Japanese curries as a whole, owing to the rapid rise in popularity of chickenkatsu curry.[7]
